About Gonzalo Castillo

Gonzalo Castillo purchased the three-hectare Finca La Tejana only five years ago, with an eye to producing Pacas coffee for the specialty market. Guided by his brother and drawing on passed-down family wisdom, the Castillos farm coffee along with complementary crops like banana, allspice, and rambutan. Starting small has allowed Gonzalo to be meticulous and hands-on with his processing, and the results are on a constant upward trajectory. We're enamored (as always) with the classic Santa Barbara region Pacas flavor profile, with herbaceous notes of apple and berry, along with tangy fruit candy.
